Born in Baltimore, Maryland, Ms. Saiontz has been a resident of Miami, Florida since 2000.

Ms. Saiontz attended the University of Miami where she earned her BA degree in 2004 with a double major in Psychology and Criminology. In 2011, Ms. Saiontz earned her Juris Doctorate (JD) degree from the Florida International University College of Law, where she also served as Justice of the Phi Alpha Delta Legal Fraternity, and as a Supreme Court Justice for the Student Government Association. She was admitted to the Florida Bar in 2017.

Ms. Saiontz joined Rubinstein & Associates, P.A. as an Associate Attorney for the firm in 2017, practicing in the areas of business law, commercial litigation, real estate law, and estate planning. Previously, Ms. Saiontz served as the firm Manager for over 14 years and as a Registered Paralegal since 2015.

Ms. Saiontz is an active member of the Dade County Bar Association and the American Bar Association, serves on the Professionalism Committee for the FIU Law Alumni Association, of which she is also a member, and is currently a participant in the 39th Class of Leadership Miami hosted by the Greater Miami Chamber of Commerce.

Ms. Saiontz is devoted to supporting South Florida charities and foundations. She is a Founding Board Member and Vice-Chairman Emeritus of National Voices for Equality, Education and Enlightenment, Inc. (NVEEE), an anti-bullying non-profit organization based in Miami, and currently serves as an Advisor. She has also served as Vice-President of Women in the Arts Miami since 2013.

Ms. Saiontz currently focuses her practice areas into real estate law, commercial/business litigation and transactions, and estate planning.
